My coworker just sent me a long anti-Mormon email. How should I handle this?

If he sent it to a work email, that's totally inappropriate, and you should call him out for it. If he sent it to a personal email, I'd resond by personal email letting him know your relationship is now 100% business, and never to talk personal matters with you again.
